1. The secret of "Junmai Ginjo Shinhi (AKE)"

Shinhi is a liquor characterized by its bright red color using red yeast and its refreshing sweetness and acidity.
In fact, this sake has another characteristic. It is brewed from sake rice in an environment that coexists with biodiversity.

2. Salamander Valley

Sake rice, which is the raw material for cordillera, is made in the valley of the Oyama mountain range. The valley is home to more than 60 species of aquatic organisms and rare satoyama plants, including the endangered salamander. There is a rich ecosystem in this valley.

3. Sake and biodiversity

Sake made with clean water and in an abundant natural environment. That is this "Junmai Ginjo Shinhi". The creatures of paddy fields and satoyama cannot survive without human intervention. Maintaining the environment of this valley. As we continue to make sake rice in this environment, the creatures will tell us that this is a rich and safe environment. The delicious sake made from it is a form of ecosystem service created by living with living things.
